I’m absolutely in love with healthy lunch bowls, in my case they are typically dinner bowls, as I only tend to have a little snack midday.
I hope the lunch bowl phenomenon hasn’t completely passed you by, anyway, here is a quick reminder what it’s all about….
Mix together just about any healthy ingredients you love, hot or cold, typically including a grain, vegetables and a protein and put in a bowl – et voilà it’s a lunch/dinner bowl!
Well, I thought I could do a special about my favorite healthy food bowl recipes for you, so here I’m with the first recipe.
It’s more or less a salad bowl – healthy, yummy & full of vitamins!
INGREDIENTS
(for 1 person)
cornsalad
1/2 yellow pepper
a hand full of cocktail tomatoes
1/2 pomegranate
1/3 of a low fat feta
1 cup quinoa / bulgur mix
1/2 avocado
for the dressing – mix together a little bit of white balsamic vinegar, 1/2 teaspoon of honey, 1/2 teaspoon of mustard, 1 teaspoon of olive oil and a little bit of water, salt and pepper.
Slowly cook the quinoa and bulgur as stated on the package. Cut the pepper, tomatoes and avocado. Place everything beautifully in a bowl and garnish with the dressing and pomegranate seeds.
