It was about time for a new pancake recipe. We love to have pancakes on Sunday, normally we have the 2 ingredients version with banana and eggs, put as Sunday’s has turned out to be our longest training day we tend to have a version with more carbs.
These vanilla spelt pancakes are super fluffy and absolutely delicious. The Bourbon Vanilla from Xucker makes it extra special.
VANILLA SPELT PANCAKES
- 100 gr of spelt flour
- 1 tsp of baking powder
- pinch of salt
- 1 egg
- 150 ml of coconut milk or normal low fat milk
- 75 gr of blueberries + 75 g of raspberries
- coconut oil for baking
- calorie free Icing sugar from Xucker for serving
- 2 tsp Xucker Bourbon Vanilla
- 1 low fat yoghurt for the topping
Mix the flour, baking powder and salt in a big bowl. Mix the egg and coconut milk in another bowl. Add the coconut/egg mixture to the flour and mix together and ad 1tsp. of Bourbon Vanilla. Heat a bit of coconut oil in a non-stick skillet. Use a large tablespoon to make small pancakes in the middle of the pan. After you drop in the batter, turn down the heat to allow the pancakes to bake gently.Bake for a few minutes until the pancake gets firm and you can turn it. Turn it gently and fry for another 2 minutes or until golden.
Mix 1 tsp of Bourbon Vanilla with the yoghurt and ad a little bit of Xucker icing sugar for sweetness. Build a little pancake ”tower” and add the yoghurt-vanilla topping on top & serve with the berries (& dust with Xucker icing sugar if you like it extra sweet).
