*500g green or white asparagus
*1 large onion, chopped
*2 chicken stock cubes
*2tbsp olive oil
*fresh lemon juice of 1/2 lemon
*1/2 l water
*salt and pepper
*Cremfine or fat-reduced Crème fraîche
Skin the asparagus stalks (white asparagus), you don’t need to skin the green asparagus stalks – only chop of the lower parts 2-3cm. Cut the asparagus into little pieces (1cm).
Peel and roughly chop the onion. Put a large pan on medium heat and 2 tbsp of olive oil. Add the chopped onion and lightly sautée it.
Add the asparagus to the onion an let them simmer for 10 minutes.
Add the stock cubes and 1/2 liter of water and bring to boil. Cook for another 15 minutes.
Purée the soup and and strain the soup through a sieve.
Add the lemon juice,put the soup in serving bowls and garnish with Cremefine or fat-reduced Crème fraîche.
Season with salt and pepper.
